Eel smokehouse since 1856
The Smit family has owned Palingrokerij Smit Bokkum for four generations. Son Evert runs the restaurant, but his father Jan Smit smokes fresh eel and salmon every morning. For more than 150 years, various types of fish have been smoked in this smokehouse. Jan continued the family tradition forty years ago when he started smoking eel. A tradition that lasts no less than six generations and whose secret process has never been disclosed. With surgical precision, Jan cuts open the fish and then chooses the fattest eels to smoke. Two hours of smoking produce a delicious smoked eel, which you can eat straight from the skin.
